Ingredients
- 2 Double Breast Chicken on the frame with skin.
- 80g rosemary and garlic butter (Recipe Here).
Method
- Using your hands separate the skin from the breast meat being careful not to tear the skin.
- Place rosemary and garlic butter under the skin (between the breast meat and skin) covering the entire breast area.
- Repeat with remaining butter and chicken breasts.
- Secure skin at the front of the breast with toothpicks to prevent skin shrinking during roasting.
- Lightly rub breasts with a little olive oil and seasoning.
- Place chicken frames on baking trays, breast side up.
- Roast at 160°C for about 20 minutes or until just cooked through (do not overcook).
- Cool. Remove breast from frames, discard frames and toothpicks.
