  • Ingredients

    • 100g Pasteurised Egg Yolk.
    • 275ml Olive Oil.
    • 275ml Vegetable Oil.
    • 45ml Hot Water.
    • 20g Fresh Lemon Juice.
    • 5g Sea Salt.
    • Fresh Ground White Pepper.

    Method

    • Whisk egg yolk in bowl or process whilst slowly adding half the combined oils in a thin stream.
    • Add half the water, mix to combine.
    • Continue to whisk or process egg mixture while slowly adding the remaining oil until just combined and thickened.
    • Add lemon juice and seasoning.
    • Add a little hot water if necessary to achieve the desired consistency.
