Ingredients
- 100g Pasteurised Egg Yolk.
- 275ml Olive Oil.
- 275ml Vegetable Oil.
- 45ml Hot Water.
- 20g Fresh Lemon Juice.
- 5g Sea Salt.
- Fresh Ground White Pepper.
Method
- Whisk egg yolk in bowl or process whilst slowly adding half the combined oils in a thin stream.
- Add half the water, mix to combine.
- Continue to whisk or process egg mixture while slowly adding the remaining oil until just combined and thickened.
- Add lemon juice and seasoning.
- Add a little hot water if necessary to achieve the desired consistency.
