Ingredients
- 60g Butter.
- ⅓ cup Brown Sugar.
- 2 Tablespoons Golden Syrup.
- ½ teaspoon Ground Ginger.
- ½ cup Plain Flour.
- ½ teaspoon Lemon Juice.
Method

Pre heat oven to 160°C.
- Combine butter, brown sugar, golden syrup and ginger into small sauce pan, and stir over low heat (ensuring not to let it boil).
- Once butter has melted, remove from heat.
- Add lemon juice and sift in flour, stir until combined.
- Put a Tablespoon of mixture on a greased oven tray (allow 10cm gap for spreading between each teaspoon of mixture).
- Bake for 5 – 7 minutes or until snaps are bubbling and are golden brown.
- Remove from oven and slide spatula under each snaps and place them on an upsidedown tumble glass (or any glass that is 6cm – 8cm wide).
- Place on wire rack to cool. Continue this until all of the mixture is gone.
- Serve with a scoop of ice cream.
