  • Ingredients

    • 60g Butter.
    • ⅓ cup Brown Sugar.
    • 2 Tablespoons Golden Syrup.
    • ½ teaspoon Ground Ginger.
    • ½ cup Plain Flour.
    • ½ teaspoon Lemon Juice.

    Method

    • Pre heat oven to 160°C.
    • Combine butter, brown sugar, golden syrup and ginger into small sauce pan, and stir over low heat (ensuring not to let it boil).
    • Once butter has melted, remove from heat.
    • Add lemon juice and sift in flour, stir until combined.
    • Put a Tablespoon of mixture on a greased oven tray (allow 10cm gap for spreading between each teaspoon of mixture).
    • Bake for 5 – 7 minutes or until snaps are bubbling and are golden brown.
    • Remove from oven and slide spatula under each snaps and place them on an upsidedown tumble glass (or any glass that is 6cm – 8cm wide).
    • Place on wire rack to cool. Continue this until all of the mixture is gone.
    • Serve with a scoop of ice cream.
