Ingredients
- 90g Butter melted.
- 170g Caster Sugar.
- 3 Eggs.
- 100g Self-Rising Flour.
- 100g Plain Flour.
- 5g Baking Powder.
- 40g Ground Hazelnut Meal.
- 40g Ground Almond Meal.
- 200g Ripened & Mashed Banana.
Method
- Pre-heat oven to 160°C.
- Mash Bananas, Hazelnut & Almond meal in a bowl.
- Mix flours and baking powder together in a separate bowl.
- Cream butter & sugar together (whisk together until it looks like cream).
- Stir in eggs with a wooden spoon.
- Sift and fold in flours and baking powder mixture.
- Add banana and ground meal mixture, mix until all ingredients are combined and to the right consistency.
- Place mixture into a greased loaf tin.
- Bake in pre-heated oven at 160°C for 35-45 minutes (or until you can put a folk in and out and it is dry).
- When ready remove from oven and stand for 5 minutes.
- Then turn out onto a wire rack to cool.
